Chipotle Paste delivers a fruity, smoky flavor with rich hints of chocolate and a nutty, sweet heat that is a chef delight for signature dishes. This paste is made from pureed, smoked and dried jalapeño peppers combined with a vinegary adobado sauce. Use with shredded meat dishes for a rich, smoky, flavor. Add to barbecue sauce for a Mexican flavor twist. Add to smooth salsas or fruit salsas. Create steak ir chop sauce by combining Chipotle Paste with pan drippings. The Chipotle is a large, dried, smoked jalapeno. As much as one-fifth of the Mexican crop is processed as Chipotle. Dull tan to a coffee brown color. Veined and ridged, measuring about 2" to 4" long and about 1" across medium thick fleshed. Smoky and sweet flavor with tobacco and chocolate tones, a brazil nut finish and a subtle, deep, rounded heat. Mostly seen presented in red adobo sauce. Variety of uses including soups, salsas and sauces. Widely used pepper in Mexican and Southwestern cooking. Grown in Veracruz, Oaxaca, Chihuahua, Texas and southern New Mexico.
