The asparagus plant is a member of the lily family, as are the onion and the leek. It is a unique plant in that it has no leaves. Rather, it has delicate photosynthetic branches, called phylloclades, which make up the tip of a stalk of asparagus. Asparagus still grows wild, but more often today, it is cultivated. Even so, it must be picked by hand because the stalks grow at different rates. This asparagus is different from that usually found in an American supermarket. It is white because the shoots are buried in dirt, or "earthed up" as they grow, thus preventing the development of the coloring and respiratory agent, chlorophyll. The shoots remain perfectly white and have a more delicate flavor. This is the more common type of asparagus grown in Europe and is a prized product of Spain, which is the source of our asparagus. It is simply packed in water and salt inside a large tin covered with a charming paper label.
