Black Diamond's super-duper sharp Cheddar is so sharp that only a crisp glass of Reisling or French White Burgundy can remove the luscious, deep-seated slap of flavor from your palate. <br />I have used this cheese in Mac 'n' Cheese, but be forewarned: this cheese should only amount to about 25% of your total cheese, blend it with a medium or mild cheese or the children in your family will cry and some of the feint-of-hearts will gaspit is that sharp. <br />Another Party Use: slice a big fat wedge and place in a pre-heated 350 degree oven for about 10 minutes or until the center starts to collapse. Serve immediately with a bland cracker, say water crackers and your guests will swoon and uh-and-ah with delight. More importantlyit took almost no time to prepare.

This is a wonderfully sharp cheese... and a regular in our house. While I don't disagree with the other reviewer's wine choice (a Riesling or a Bergundy would be fantastic with this), my own personal favorite to pair with this cheese is an Austrailian Merlot - Jacob's Creek to be exact. There's a character to that wine that offsets this cheese in an amazing way.
