This cheese board presents the worlds three classic blue cheeses: Roquefort, Stilton, and Gorgonzola. Roquefort is certainly the most ancient of these cheeses, as it was probably first produced in the Second Century A.D. This blue is made from raw ewes milk and is aged in the caves of Le Combalou Les Causses. Stilton was not created until much later, in the Eighteenth Century. It is made from cows milk and is the only British cheese to have legal protection. Italian Gorgonzola is also made from cows milk. We are featuring the more aged variety, known as Mountain Gorgonzola. The two cows milk cheeses have a softer, creamier taste than the drier, crumblier Roquefort. These blues are some of the most intensely delicious cheeses in the world.
