Hackleback Caviar
Hackleback (latin: Scaphirhynchus platorynchus), also know as Shovelnose, and sometimes called North American sturgeon, are relatively small in size, achieving maturity in up to five to seven years, and weigh less than twenty pounds. They are harvested from the mighty flowing rivers of the central U.S. These beautiful glistening eggs are black in color with a slightly golden cast. Hackleback has a distinguished, smooth, buttery flavor characterized by an aromatic, savory, intense nutty taste. Our 1, 2, and 4 ounce selections come in glass jars. Our 1.75 and 5.5 ounce selections come in attractive crystal glass jars, perfect for gift giving. All other sizes come in elegant traditional tins. Labeling may vary slightly. Shelf life 4 to 6 weeks refrigerated (ideally at 28 to 32 degrees).
