Mimolette - Extra Aged 18 Months

Also known in France as Boule de Lille, this cheese is very similar to Hollands Edam. Made from cows milk, it has a dark orange, aroma less rind and goes well with beer. Originated in Nord-Pas-de-Calais, Mimolettes flavor gets stronger and its color darkens as it ages. This cheese is matured for 3 months before it is ready for sale.
