I'm a Southerner. Here is what you do. Either cut 1/4" slices and fry for around 3 minutes a side on medium heat, or boil the ham in a 5-gallon lard can, pitch the water, get it boiling again, put the lid on, wrap the can in quilts or blankets (many layers), and let it sit for 24 hours. Keep it hot, and it will slow-cook overnight. NEVER bake a country ham. If you fry it, it's supposed to be salty and a little hard. Deal with it. You can reduce the salt by boiling it for 30 seconds on a side in a small amount of water. If you slit the fat, the ham will curl less. I have bought a lot of hams from these folks. They used to be just like the ones my grandmother and great uncles used to make in Kentucky, but it is my impression that they're not as good as they used to be. You need a ham aged over a year. I think Father's country hams are now produced in too short a time. Check their website. My last really good ham was from an outfit called Col. Newsom's. Smithfield hams are crap.
