The Wagyu breed was developed by the Japanese to be the world's most succulent, most flavorful, most tender, and juiciest meat. Adding to its cachi is that it is still relatively rare. Wagyu's superb quailty comes from diet, as well as genetics. Just Caviar Wagyu, for instance, is fed nothing but minimally-processed grains, pure, clean water, and minerals for optimum health and flavor. The result is nothing less than spectacular. So much so, in fact, that overcooking Wagyu is unthinkable. It's so tender and buttery that it demands to be cooked rare or, at most, medium-rare. Overcooking eliminates all the delicious fat that makes this meat so succulent. In addition, I find that Wagyu is best served with very plain sides.
