Whole Duck Foie Gras in Aspic with Armagnac Brandy by Bizac Duck foie gras is easily distinguished from its original interpretation of goose foie gras for it's more gamey and musky flavor. In essence, while goose is subtle and smooth, duck foie gras has a stronger, more decided flavor. This particular micuit (partially cooked) foie gras by Bizac has been seasoned, marinated in Armagnac and cooked just enough to preserve full flavor of the original product. Serve chilled, but scoop out with a warm spoon, with some of the yummy brandy on top and paired with bread or brioche.
