Salchichon de Vic

The bustling city Vic is the center of a cluster of ancient Romanesque towns nestled in the Pyrenees Mountains north of Barcelona. Their salchichÃ³n is known throughout Spain. They proudly proclaim it the best in the world. We have found a native of Spain living in the US who has recreated it from a Catalunya recipe. It tastes great! Spanish salchichÃ³n differs from chorizo, because it has more garlic and no paprika. It's closest relative is the salami sausage of Italy. About 2 inches thick.
