Aging gives any cheese a more complex character (much like people). While a young gouda is supple and mild, an aged gouda is anything but. Harder and crumblier, more flavorful and aromatic, our aged gouda has caramel tones and a honey aftertaste. This is great for melting, and don't be afraid to substitute good old Parmigiano and grate this over pasta. The robust flavor pairs well with ales and hearty wine.
