I tried this cornbread for the first time tonight with dinner. I was very impressed! I have been experimenting with making gluten-free cornbread from scratch using masa, cornmeal, and other ingredients, with passable results. But this was much better, and a whole lot easier! Next time I think I'll try adding a can of creamed corn to the mix; it's something I've always liked to do with the old Jiffy mixes to make them more, well, corny. <br />My whole family liked the corn bread, including the gluten-eating family members. It rose up nice and had a great flavor and texture.

I *LOVE* this corn bread mix. It is the most versatile gluten free mix I've bought. It's hard to mess up, and works with everything!
I buy it by the case, and use it several times a week in various things. It obviously makes corn bread, but you can add a bit of sugar and make sweet corn muffins. I also use it as a batter for frying... spiced it makes a great southern fried chicken and plain it makes amazing fried eggplants.
