Most valued Darjeeling tea gardens are located along the sloping hills and valleys of the Himalayan Mountains in Northern India. The high altitude ranging in elevation between 3000 and 6500 ft - makes the tea leaves special. Here, the tea makers' art is said to be comparable with the art of wine making. Known as the Champagne of tea", when properly brewed it yields a thin-bodied, light-colored liquor with a floral aroma a tinge of astringent tannic characteristics, and a musky spiciness often referred to by tea connoisseurs as "muscatel." ***1st Flush is harvested in mid-March following spring rains, it has a gentle and very light color and aroma. ***2nd Flush is harvested in June and produces an amber and more astringent cup. ***Autumnal Flush is harvested in the autumn after the rainy season, and has a somewhat less delicate flavour and less spicy tones. --
This superior Darjeeling from the renowned Makaibari Estate speaks of the pristine environment in which it was cultivated. Grown at 5,000 ft. in the mist-covered foothills of the Himalayan Mountain Range, it boasts a beautiful dark amber cup color. In leaf appearance, it is similar to last year's harvest as it is also interspersed with silvery unopened leaf buds. These buds enhance the sweet, fruity, muscatel notes with complex character in both the cup aroma and taste. The Makaibari Estate is the worlds oldest single-owner tea estate. Cradled in the lap of the majestic Himalayan Mountains, the Estate maintains the holistic practices of bio-dynamics and permaculture.
Recommendations: Use 1 heaping teaspoon per 6 oz. cup; heat fresh water to a roaring boil; let steep 2-3 min.
