The 55% cocoa content may be termed bittersweet by some manufacturers, however the careful bean selection, roasting and very fine grinding create an extremely smooth and delicious dark chocolate. I like the fact that there is minimal sugar. Of course it would be even better if they used xylitol instead of sugar but then this is the real world. The tasted is excellent and if you like raspberries, they have that version, or, if you prefer they have up to 77% cocoa versions and everything thing in between. The price is right as well.
