Tapas literally means "lid". Some claim tapas came to be when a Spanish king was instructed by his physician to eat many small meals a day. We have included some of our favorites: Manchego is Spain's most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. Taste Manchego for the first time and you will be surprised at how long the wonderful flavor lingers on your palate. It is an experience you will be drawn back to again and again. (1 lb.) Quince Paste (Crema de Membrillo) is most often eaten with cheese. It offers a soft, sweet contrast to the slight saltiness of Manchego. (300g.) Jamon Serrano is a cured Spanish ham from the famed white pig, found only in Spain's mountainous regions. It is salted, hung in cool conditions, then cured for fifteen months, giving it a superior and complex taste. Essential for any tapas, it is especially delightful when served with Manchego cheese. (3.5 oz.) The Largueta Almond is the queen of roasted and salted snacks. Our Larguetas are fried in extra virgin olive oil and tossed in salt.
