Bitter honey from Sardinia.Corbezzolo honey, from the De Col Piras farm in Sardinia, is made only with the honey collected from the flowers of the Mediterranean arbutus, or strawberry tree. This bushy tree grows wild all around the southern Italian and Sardinian coasts. The spiky red fruit is most often used for jam. I ordered this honey so that I could make some of the recipes in a Sardinian cookbook....unfortunately the honey arrived seriously crystalized. I'll see if I can melt it to reliquify, but my cookbook (and several others) states that Sardinian Bitter Honey is one of the honeys SLOWEST to crystalize....so, I'm thinking sales are slow and quality assurance poor. On the plus side, it did arrive in a timely manner. Personally, I won't buy again from this company.
